WHere is a simplified interpretation of a drink featured on a new menu. It's a party-sized premix that's bursting with flavours associated with festive period, rendering it perfect for your festive gathering. Save the extra cordial for breakfast cocktails, puddings, or for another batch of bikinis.
The Bikini Cocktail
Yields 10 servings
Ingredients for the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Drink (produces 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Cordial: Put every ingredients inside a pan, bring to a simmer, agitating so the sugar melts. After that, take off the stove and leave to cool down fully. Pour to a sealable bottle, cap it and store in the refrigerator, where it will keep for about one month.
Preparing the Cocktail Base: Pour all the liquids in a big jug, allow it to infuse for an hour, then filter it preferably using muslin, making it completely strained.
To serve: Add 85ml from the batch mix into a cocktail shaker packed with ice, gently stirring carefully for about 60 seconds to chill. Pour into a frosted cocktail glass or equivalent, garnish with a few cranberries adding the final touch using a light spray of the essential oil above the glass.
